Gray Salt Caramels are soft butter caramels coated in dark chocolate and sprinkled with gray sea salt. A signature confection from Seattle-based Fran’s Chocolates, they were introduced by Fran Bigelow in 1998, inspired by the traditional salted caramels of Brittany, France.

The butter caramel is cooked slowly to develop a rich flavor while keeping its soft texture. Once coated in dark chocolate, each piece is finished with crystals of gray sea salt harvested off the coast of Brittany.

The soft, buttery caramel contrasts with the mild bitterness of the dark chocolate. The salt crystals add a delicate crunch, temper the sweetness, and leave a gently salty finish. The caramels pair well with an unsweetened espresso.
