La Bête-À-Séguin is a highly expressive soft cheese with a semi-washed rind, produced by Fromagerie de l’Île-aux-Grues and made from raw cow’s milk sourced on the island in Québec. It has a creamy, almost melting texture and a pale yellow to straw-colored paste, while the rind develops whitish and lightly reddish tones that signal active maturation.
Its aromatic profile is intense and layered, with notes of butter, hazelnut, and milky sweetness that evolve during aging into more pronounced, animal and gently pungent nuances. The cheese matures for approximately 60 days, during which it gains depth and a distinctive personality, reflected in its name inspired by the artist Marc Séguin, who contributed to its creation.
