Buronoix is an innovative French cheese originating from the Auvergne region and produced by the renowned Fromagerie du Buron. This reinterpretation of the traditional Murols cheese is distinguished by its unique aging process with the addition of walnut liqueur, which imparts a rich and complex flavor.
The cheese is made from pasteurized cow’s milk sourced from the mountainous areas of Auvergne and matures for 25 days in underground cellars near Saint-Nectaire cheeses. It is characterized by its yellow-ivory, soft, and elastic paste, with a central hole that allows for even ripening.
During maturation, Buronoix develops notes of hazelnut, cream, and butter, enhancing its nutty profile. Depending on the length of aging, floral or fruity aromas may also emerge, tailored to clients' preferences.

Fromagerie du Buron is a family-owned dairy located in Cournon-d'Auvergne, in the Auvergne-Rhône-Alpes region of France. Established in 1904 by Jean Duchêne, it specializes in the aging of traditional cheeses from Auvergne, particularly Saint-Nectaire AOP.
Currently, the third generation of the Duchêne family, led by Pierre Duchêne, continues this tradition, combining centuries-old expertise with modern techniques. In addition to aging Saint-Nectaire, Fromagerie du Buron produces other authentic cheeses, including Grand Murols and its variations such as Buronnoix, a cheese aged in walnut liqueur, which has won medals at the General Agricultural Competition.
