Fontina DOP from the dairy La Fromagerie Haut Val d’Ayas is one of the most renowned Italian cheeses, bearing the prestigious Protected Designation of Origin (DOP) label. This cheese is made exclusively from fresh, unpasteurized cow’s milk sourced from cows grazing on alpine pastures located above 2000 meters of elevation, which contributes to its rich and complex aroma.
Fontina has a semi-soft texture, pale yellow color, and characteristic small holes throughout the paste. Its flavor is full, rich, and slightly nutty, with delicate notes of mountain herbs.
The maturation process lasts at least 90 days in natural cellars, where stable humidity and temperature levels foster the development of its distinctive aromas and taste. This cheese is extremely versatile – ideal for enjoying with bread and wine, but also as an ingredient in dishes such as fondue and pasta.
