Comté AOP Vieux from Fromagerie de La Ferté is a traditional French cheese with a protected designation of origin, produced exclusively in the mountainous regions of Jura. It is made from raw milk of Montbéliarde and Simmental française cows, the only breeds authorized for Comté production.
The cheese undergoes an aging process in cellars lasting approximately 12 months, during which it develops a rich and complex aromatic profile. Its texture is firm, and the taste is rich and complex, with pronounced notes of goat's milk, earth, and woody undertones.
