Fukui Yahei Shōten is a sake brewery in the Katsuno area of Takashima, known for its Haginotsuyu brand. Established during the Kan’en era, between 1748 and 1751, it has been brewing sake for more than 270 years in the region between Lake Biwa and the Hira mountain range.

Production relies on rice from the Ōmi region and soft groundwater from the Hira mountains, with the aim of creating rounded sake rich in umami with a clean finish. The brewery uses varieties such as Yamada Nishiki, Gin Fubuki, Shiga Wataribune No. 6, and Yamadaho, while also exploring the potential of table rice varieties.

Its distinctive Amadare Ishi wo Ugatsu sake is brewed using the traditional tomizu-jikomi method, which dates back to the Edo period. The range also includes sake made using the kimoto method, aged and seasonal releases, and liqueurs made from Japanese fruit.

Fukui Yahei Shōten sells its sake in Japan and abroad, linking its future development to new production methods and the preservation of local agriculture.
