Geuzestekerij De Cam is a Belgian producer of traditional gueuze and fruit lambics based in Gooik in the Pajottenland region. De Cam is not a conventional brewery because it does not brew its own wort but obtains freshly produced lambic from selected regional breweries. The lambic is then matured in large wooden barrels, some of which are more than a century old. Younger and older lambics with different characteristics are carefully tasted and blended to create the intended gueuze profile. After bottling, natural secondary fermentation produces carbonation and further develops the beer’s complexity. The blendery opened in June 1997 as the first new traditional lambic blending operation established in Belgium in almost four decades. It was founded by Willem Van Herreweghen with support from several prominent representatives of the lambic tradition and the local authorities. Since 2000, the maturation and blending process has been managed by Karel Goddeau, who learned the traditional craft of gueuze blending with the Debelder family of 3 Fonteinen. De Cam operates within a historic complex whose former name Landcamme was documented as early as 1515. The word cam in Old Dutch refers to a brewery and has been preserved in the producer’s name. Its principal products include Oude Geuze, Oude Kriek, and Oude Lambiek, together with limited fruit lambic releases. Whole cherries, plums, apples, apricots, peaches, and other fruits are used for its fruit beers, including produce from De Cam’s own orchard. Production remains small-scale and is based on traditional ingredients, prolonged maturation, careful blending, and fermentation in the bottle.
