Sogno del Pinzimonio, an olive oil produced by Giacomo Grassi from Tuscany, is a sensorially intense and complex blend, specially crafted to enhance the flavor of raw vegetables such as artichokes or carrots – as reflected in the very name “pinzimonio.” The blend is made from the Moraiolo, Leccino, Frantoio, and Pendolino cultivars, and each harvest is adjusted annually according to the quality and desired aromatic profile. Sogno del Pinzimonio is more concentrated and intense, with pronounced herbal and earthy notes that pair beautifully with gelatin-based dishes, bitter greens, mushrooms, truffles, as well as game or red meat dishes.
