Gypas Cretan Graviera PDO is a traditional hard cheese made from a blend of sheep and goat milk, produced in Crete under the rules of its Protected Designation of Origin. The milk is sourced from local herds grazing in mountainous areas, where natural vegetation influences its composition and flavor.
The cheesemaking process includes coagulation, pressing, salting, and a controlled maturation period of at least three months. During aging, the cheese develops a firm yet slightly elastic texture, a pale yellow color, and small irregular holes.
On the palate, it is balanced and mildly sweet, with subtle nutty and lightly savory notes that become more pronounced over time. The aroma remains clean and dairy-driven, reflecting the quality of the raw material.
Compared to more intensely aged cheeses, it offers a smoother and more approachable profile. Its versatility allows it to be used both as a table cheese and in cooking applications.
The PDO designation ensures that both production and raw materials remain strictly linked to Crete. Overall, it represents a classic, terroir-driven expression of Cretan cheesemaking.
