Legado is a premium extra virgin olive oil produced from the Hojiblanca variety in Andalusia, Spain. This single-variety oil is obtained from early-harvested olives, picked in mid-October, when they reach the veraison stage and acquire a yellowish hue.
At this stage of ripening, the oil yield is lower, but it achieves exceptional aromatic complexity and a high content of natural antioxidants, contributing to its bitter and spicy finish. Legado oil features an intense green fruity profile, with notes of fresh grass, green apple, banana, tomato, and aromatic herbs. On the palate, it is sweet, with an aftertaste of green almond and a pleasant hint of white pepper.
This profile makes it ideal for use in raw form, as a dressing for salads, vegetables, roasted fish or meat, as well as for preparing traditional dishes such as bruschetta and artichoke carpaccio.
