Religiosamente Guardado is a limited-production red wine from Herdade Papa Leite in Portugal’s Alentejo region, created from a blend of Syrah, Alicante Bouschet, Merlot, and Cabernet Sauvignon. The grapes are carefully hand-harvested and transported in small crates to preserve their quality before processing in the winery.
Fermentation takes place in stainless steel tanks with controlled temperatures over several weeks, followed by malolactic fermentation to refine the wine’s structure. The wine then undergoes extended aging, spending around two years in new French oak barrels and additional time maturing in bottle before release.
In the glass it shows a deep garnet color and an aromatic profile marked by ripe dark fruits such as blackberry and plum, accompanied by notes of spice, dried fruit, and subtle oak influences. On the palate it is structured and balanced, with well-integrated tannins and a fresh acidity that supports its richness and depth.
The finish is long and layered, reflecting both the concentration of the grapes and the careful aging process. Religiosamente Guardado pairs particularly well with robust dishes such as game, slow-cooked meats, roasted lamb, and aged cheeses.
