Fish Sauces

Nước Mắm Hoàng Gia is a traditional Vietnamese fish sauce made from fresh anchovies sourced from the Tuy Phong area and sea salt from Chí Công in Bình Thuận Province. Anchovies account for 75 percent of the product while the remaining 25 percent consists of salt. The ingredients are combined in a ratio of approximately three parts fish to one part salt. The mixture undergoes natural fermentation for around eighteen months using a traditional Vietnamese maturation method. Only the undiluted first-press liquid extracted from the fermented fish mixture is used for this product. No artificial colors or preservatives are added. The finished sauce has a clear amber color and a pronounced but balanced aroma of fermented anchovies. Its flavor is full and salty with a prominent natural umami character and mild sweetness in the finish. It can be used as a dipping sauce, a marinade ingredient or a seasoning in various dishes.
