Holden Farm Dairy, producing Hafod Welsh Organic Cheddar, operates on Bwlchwernen Fawr, a family-run organic farm in West Wales. Established in 1973, it is one of the longest-standing organic dairy farms in Wales.

The dairy specializes in crafting Hafod cheese using raw milk from their herd of Ayrshire cattle, which is known for its rich and creamy milk ideal for cheesemaking. Their Hafod Cheddar, a traditional hard cheese, is aged for a minimum of 10 months and is noted for its deep, complex flavor.
