Nước Tương Lên Men Hương Sen is a naturally fermented soy sauce produced by the Vietnamese company Hương Sen in An Giang Province. Its main ingredients are whole soybeans, salt, and koji culture. Carefully selected soybeans are soaked in a salt solution and left to ferment for several months. The koji culture supports the gradual breakdown of the proteins and starches contained in the soybeans. During maturation, aromatic compounds develop and give the sauce its pronounced umami character. This method allows the producer to obtain a natural concentration of protein without processing defatted soybean meal at extremely high temperatures. The finished sauce has a dark brown color and a thicker consistency than standard industrial soy sauces. Its flavor is salty and full-bodied with mild sweetness and a lingering umami finish. The aroma of fermented soybeans is distinct but adapted to the traditional tastes of southern Vietnam. The sauce can be served directly with rice, noodles, vegetables, tofu, and vegetarian dishes. It is also suitable for marinades and for seasoning soups, stir-fried dishes, and various dressings.
