Tamajiman Junmai Daiginjō is a sake produced by Ishikawa Shuzō in Fussa, western Tokyo. It belongs to the junmai daiginjō category and is one of the premium offerings of the Tamajiman brand, whose name expresses pride in the Tama region.
It is made from Yamada Nishiki rice from Hyōgo Prefecture, polished to 35% of its original grain size, along with rice kōji and natural groundwater. It is produced without added distilled alcohol and contains 15–16% alcohol. The brewery draws water from a well approximately 150 meters deep and maintains seasonal brewing during the colder months.
It is characterized by elegant aromas of flowers and ripe fruit, a silky texture, and rich, layered umami, with a clean flavor and pleasant finish. Suggested food pairings include white fish carpaccio, scallops with lemon and butter, and meat dishes with richer sauces.
