KAYU Signature is the signature chocolate cake of the Dubai-based pastry shop KAYU Bakehouse. It was created by pastry chef Karim Bourgi when the brand was launched in 2021. The dessert is built on a soft and intensely flavored chocolate sponge. It is layered with salted caramel and crunchy hazelnut praline. The milk chocolate crémeux provides richness and a smooth texture while the light dark chocolate mousse adds a more pronounced cocoa character. The combination of soft, creamy, and crunchy elements presents chocolate through several contrasting textures. Its outer layer has a smooth and glossy finish embossed with the KAYU logo. The distinctive geometric shape is created using a specially designed mold produced in Paris. The product is available both as an individual pastry and as a larger cake. KAYU Signature is one of the pastry shop’s best-selling products and an original creation that Bourgi considers one of the most important achievements of his career.
