43 Độ Đạm – Đỉnh Cao Nguyên Vị is a traditional fish sauce produced by Khải Hoàn on Phú Quốc Island. It is made exclusively from fresh anchovies caught in the waters surrounding the island and sea salt from the Bà Rịa–Vũng Tàu region. It contains no additives, preservatives, artificial colors or flavorings. The fish and salt undergo natural fermentation for 12 to 15 months in traditional wooden barrels. During maturation the fish proteins gradually break down into soluble amino acids that create the characteristic umami flavor. The 43N designation indicates that the sauce contains approximately 43 grams of total nitrogen per liter. Amino acid nitrogen accounts for at least 50 percent of its total nitrogen content. The product has a dark reddish-brown color and a mild aroma of fermented anchovies without a pronounced ammonia smell. Its flavor is intensely savory and salty with natural richness and a long mildly sweet finish. The sauce carries the protected Phú Quốc geographical indication and represents the highest standard nitrogen level permitted under its specification. It is suitable for direct dipping and for seasoning cooked dishes, marinades and sauces.
