Rice Noodles

Phở Khô Khánh Linh are dried Vietnamese flat rice noodles produced by the Khánh Linh Cooperative in the former Hà Nam Province. They are the cooperative’s classic white phở noodles, distinct from its brown rice and vegetable varieties. The product is made from rice flour obtained by processing selected rice. The rice is first washed and wet-milled to produce a smooth and uniform batter. The batter is then processed using a sheet-forming machine before being cut into flat strips characteristic of phở noodles. The shaped strips are dried under controlled conditions to reduce their moisture content and allow longer storage without refrigeration. The cooperative uses a modern production line equipped for washing and grinding rice, forming sheets and drying the noodles. They can be used in phở soup, stir-fried noodle dishes, mixed dishes and combinations with meat, vegetables or seafood.
