Kobori Shuzo is a Japanese family-owned sake producer based in Hakusan City, Ishikawa Prefecture, with a history dating back to 1716, making it one of the oldest continuously operating sake breweries in Japan. For more than three centuries, the company has preserved traditional brewing methods while combining them with careful ingredient selection and modern quality control. Production takes place at the foot of Mount Hakusan, a region renowned for its exceptionally pure spring water, which is one of the key elements in crafting high-quality sake. Kobori Shuzo uses carefully selected sake rice varieties, including Yamadanishiki, Gohyakumangoku, Hokuriku 12, and the local Ishikawamon variety, to create a wide range of distinctive flavor profiles and styles. The brewery is best known for its flagship brand, Manzairaku, which gained recognition in the late nineteenth century and remains the company's signature label. In addition to producing various categories of premium sake, Kobori Shuzo also crafts traditional Japanese plum wines, including long-aged umeshu. The company's philosophy is rooted in preserving artisanal brewing traditions while making the most of the natural resources of the Hakusan region, one of Japan's most renowned sake-producing areas.
