Early Harvest is a premium extra virgin olive oil made from the indigenous Greek Smertolia variety, grown in the region of Laconia. The oil comes from an old estate in the area of Krokees, where the olive trees grow on a unique "Krokean stone" soil, which contributes to its distinctive strength and character. The olives are hand-picked while still green and not fully ripe — aiming to maximize aroma, nutritional value, and a high level of polyphenols (antioxidants).

The oil is produced through cold extraction, with low acidity, and stored in stainless steel tanks filled with nitrogen to preserve quality before bottling. Each package is handcrafted and individually numbered, featuring a refined design that reflects the exclusivity and premium status of the product.
