Kouvarakis Xygalo Siteias PDO is a traditional soft cheese from eastern Crete, produced in the Sitia region and protected under PDO status, which requires that both production and raw materials originate locally. It is made from sheep’s and goat’s milk through natural acidification, with minimal intervention and only light salting, resulting in a product that reflects the simplicity of its process.

The texture is soft, moist, and spreadable, often slightly grainy, with no defined shape due to its high moisture content. Its flavor is fresh and mildly acidic, with a clean lactic profile that remains balanced and not overly sharp.

The name “Xigalo” refers to the acidification process that defines its character, linking the product directly to traditional fermentation methods. In culinary use, it is versatile and commonly used as a spread, in salads, or as a base for simple dishes where its acidity enhances other ingredients without dominating them.

Kouvarakis’ version follows a production approach based on local milk from the Sitia area, allowing seasonal variation and terroir to remain evident in the final product.
