Ser Kozi Witek is a semi-hard goat’s milk cheese produced by the KozieŁawy farm, made exclusively from full-fat, unpasteurized goat’s milk from their own herd, without blending with other types of milk. It is inspired by the Morbier style, which is reflected in the distinctive layer of activated charcoal running through the center of the cheese and giving it a recognizable visual identity.
The cheese is aged for a minimum of two months, during which it is regularly turned and cared for, allowing it to develop an elastic, compact texture and a more complex aromatic profile. On the palate, it shows clean dairy notes typical of goat’s milk, complemented by gentle earthy and mature tones that emerge with aging.
The rind is lightly colored and aromatic, characteristic of washed-rind maturation, yet remains balanced and not overpowering. Ser Kozi Witek can be enjoyed on its own or as part of a cheese board, and it also performs well in warm dishes thanks to its structure and melting qualities.
