Filetes de Anchoas en Aceite de Oliva are among La Castreña's signature products, made from premium Engraulis encrasicolus anchovies sustainably caught in the Cantabrian Sea during the spring fishing season, when the fish are at their highest quality. After being carefully selected, the anchovies undergo a traditional salting and maturation process before being hand-filleted and packed in olive oil to preserve their delicate texture and rich flavor. The product contains only three ingredients: Cantabrian anchovies, olive oil, and salt, with no artificial additives or preservatives. As a semi-preserved product, it should be stored below 10°C and consumed immediately after opening to maintain its optimal quality. The anchovies are characterized by their firm yet tender texture, balanced salinity, and clean, intense umami flavor that reflects the exceptional quality of Cantabrian seafood.
