Espárragos Blancos Extra are premium white asparagus preserves produced by La Catedral de Navarra using asparagus grown in the Navarra region of northern Spain. The product is associated with the protected geographical indication Espárrago de Navarra, which guarantees its origin and traditional cultivation methods.

The asparagus is harvested during the spring season when the spears reach their optimal size and tenderness. After harvesting, the spears are blanched and carefully peeled before being preserved, a process that helps maintain their natural aroma and delicate texture.

The “Extra” classification indicates large, carefully selected asparagus spears with a smooth, tender structure and minimal fibrousness. Their flavor is mild and balanced, combining subtle sweetness with the characteristic gentle bitterness typical of Navarra asparagus.

The product is preserved simply with water and salt to maintain its natural taste. In Spanish cuisine, white asparagus is often served as an appetizer with olive oil, vinaigrette or mayonnaise, and is also used in salads and tapas dishes.
