La Sirène Brewing is an independent Australian craft brewery specializing in farmhouse and wild-fermented ales. It was founded in Melbourne in 2010 by Costa Nikias, who had previously worked as a winemaker. His winemaking background influenced the brewery’s approach to fermentation, maturation and the combination of beer and wine characteristics. The brewery originally operated in the Melbourne suburb of Alphington and is now based in Reservoir in the city’s north. La Sirène describes itself as Australia’s original farmhouse-focused brewery. Its production is inspired by traditional Belgian and French beers, particularly the saison style. The brewery works with proprietary yeast cultures, mixed fermentation and microorganisms naturally present in the local environment. Some beers are fermented using a coolship, an open vessel that exposes the wort to airborne microorganisms. Part of the production is matured in wooden barrels, while selected recipes incorporate fruit, botanical ingredients and wine grapes. These methods create complex acidic, fruity, earthy and yeast-driven profiles that can vary between batches. Its range includes farmhouse ales, sour beers, wild-fermented releases and beer-wine hybrids. Notable products include La Sirène Saison, Wild Saison, Farmhouse Red, Praline and Citray Sour.
