Herve Piquant AOP is a traditional Belgian Herve cheese with protected designation of origin status, characteristic of the Pays de Herve region. It is made from cow’s milk sourced from local farms, using time-honored artisanal techniques that include regular washing and turning during maturation, a process that shapes its intense aroma and distinctive rind.
Compared to the milder doux versions, Herve Piquant has a stronger, more pungent flavor profile, marked by pronounced milky and salty notes, earthy nuances, subtle fermentation tones, and a dense, lingering aromatic finish. Its texture is soft and creamy, often slightly adhesive on the palate, while the washed orange-reddish rind contributes significantly to its depth of aroma and expressive character.
Aging allows the cheese to develop a full, bold yet balanced flavor, with enough structure to perform well in various culinary uses. Herve Piquant AOP is traditionally enjoyed with dark bread, grapes, or apples, and its intensity also makes it suitable for cooking, particularly in sauces or alongside roasted vegetables.
In its Piquant version, Le Herve du Vieux Moulin clearly expresses the local tradition and distinctive identity of this Belgian cheese, offering a more aromatic and powerful interpretation compared to milder styles.
