Bánh Tráng Three Ladies is a Vietnamese rice paper produced by Lyan for the Three Ladies brand. It is primarily intended for preparing fresh Vietnamese spring rolls. The product is made from tapioca starch, filtered water, rice flour and salt. Tapioca starch gives the sheets elasticity, strength and a slightly chewy texture after moistening. Rice flour contributes a neutral flavor that does not overpower the filling. The sheets are round, thin and translucent with a characteristic crosshatched pattern on the surface. They measure 22 centimeters in diameter which makes them suitable for rolls containing a generous amount of filling. Before use each sheet is briefly dipped in warm water or evenly moistened until soft and pliable. It can be filled with rice noodles, vegetables, herbs, tofu, shrimp, pork or other types of meat. Once moistened the surface becomes slightly sticky and helps keep the roll closed without additional fastening.
