San Cayetano from the M. Antonio de la Riva project is a clear example of the modern vino de pasto style - an unfortified white wine from Jerez that returns to the idea of wine as a pure expression of terroir.

It is made from the Palomino Fino grape grown on the San Cayetano parcel in the prestigious pago Macharnudo, an area known for its limestone-rich albariza soils and the strong influence of the Atlantic climate. Unlike classic sherries, this wine is not fortified, but vinified as a still wine, with fermentation carried out by native yeasts and ageing on fine lees in large oak barrels.

In the glass, it shows a pale, almost translucent golden color, while the aromatic profile reveals clean notes of citrus, green apple and white flowers, complemented by the distinctive saline and mineral nuances derived from the soil. On the palate, it is taut, precise and strikingly fresh, with pronounced acidity and a long, saline finish that clearly reflects its origin.

The texture is subtle yet persistent, with a sense of tension that makes it highly gastronomic in style.
