Mado is a Turkish ice cream producer and chain of patisseries originating from Kahramanmaraş, a city known for its traditional Maraş ice cream. It operates under the family-owned company Yaşar Dondurma ve Gıda Maddeleri which was developed by members of the Kanbur family. The roots of the business date back to 1850, when Osman Ağa began making ice cream according to local tradition. The family’s knowledge was subsequently passed down through generations, while production gradually moved from street vending to specialized patisseries. Yaşar Patisserie, opened in Kahramanmaraş in 1980, played an important role in the company’s development. The first modern equipment was introduced in 1983, while the transition to organized factory production took place in 1989. The modern Mado brand was developed in the late 1980s and early 1990s. Its name was formed by combining Maraş with the Turkish word dondurma which means ice cream. The company’s best-known product is Maraş Dondurması, an ice cream made with milk and salep and distinguished by its dense, firm, and elastic texture. Its product range also includes baklava, milk-based desserts, cakes, granulated salep for preparing beverages, and other Turkish confectionery products. Today, Mado operates through a network of patisseries and restaurants in Turkey and other countries, making it a large industrial producer and hospitality business.
