Olive de Nice AOP is a traditional Maison Nicolas Alziari product made exclusively from the local Cailletier olive variety, the only cultivar permitted under this protected designation of origin. The olives are hand-harvested at optimal ripeness and prepared according to the classic Provençal method: a long brining process that preserves their natural texture, gentle bitterness, and the mild nutty-fruity character typical of the variety.
