Malandrone 1477 Stagionato 120 Mesi is an extremely long-aged Parmigiano Reggiano, matured for a full ten years, placing it among the rarest and most demanding expressions of this PDO cheese. It is produced in the mountainous Frignano area of Emilia-Romagna, at around 700 meters above sea level, using milk from cows fed on local grasses and hay, with no additives—only milk, rennet, and salt.
During this extended aging period, deep enzymatic transformations occur, resulting in a very dry, crumbly, and distinctly granular texture. The aromatic profile is highly complex and intense, marked by pronounced umami character and notes of dried fruit, roasted hazelnuts, cocoa, spices, cured meat, and aged rind.
The flavor is powerful, concentrated, and long-lasting, with a firm salinity and remarkable depth on the palate. Thanks to the natural aging process, the cheese is virtually lactose-free and highly digestible.
Stagionato 120 Mesi is intended for slow, contemplative tasting, either on its own or paired with very old wines, fortified wines, or selected spirits, and represents Parmigiano Reggiano as a product shaped by terroir and time rather than mass production.
