Mắm Cá is a traditional fermented fish paste made from whole small fish and sea salt, produced through a slow, months-long fermentation process that develops the deep umami layers characteristic of central Vietnamese cuisine. During fermentation, the fish retains part of its structure, so small pieces and fibers remain visible, giving this product a distinct identity compared to more liquid fish sauces.

Its aroma is strong and marine, while the flavor is salty, rich, and rounded, making it ideal as a base for hearty sauces, meat marinades, soup seasoning, or combinations with vegetables and fresh herbs. The paste has a dense, compact texture and blends easily with lime, chili, or garlic to create traditional dipping sauces typical of the Huế region.
