Paleta de Porco Preto Alentejano 100% Bolota is a traditional cured pork shoulder produced by Montaraz de Garvão in the Alentejo region of Portugal. It comes from the Porco Preto Alentejano, the Iberian black pig raised in the montado landscape and fed primarily on acorns (bolota) during the final stage of fattening.

This diet contributes to the characteristic marbling and the high level of oleic acid in the fat, giving the meat a smooth texture and distinctive flavor. After salting, the shoulder undergoes a slow natural curing process, often lasting around two years, during which it gradually develops its complex aroma.

The finished product typically shows a deep red color with fine intramuscular fat, while the texture remains tender and slightly oily. Its flavor is rich and persistent, with subtle nutty and slightly sweet notes associated with acorn-fed Iberian pork.

Paleta is traditionally sliced very thin and served at room temperature to highlight its aroma and delicate texture.
