Chiyotsuru Daiginjō is a Japanese sake in the daiginjō category, produced by Nakamura Shuzō, a family-run brewery founded in 1804 in Akiruno, western Tokyo. It belongs to the brewery’s flagship Chiyotsuru brand, whose name symbolizes longevity and good fortune.

It is made from Yamada Nishiki sake rice, polished to 35% of its original grain weight, meaning that 65% of the outer portion has been removed. As a daiginjō sake, it is brewed with the addition of distilled brewing alcohol. The brewery uses naturally filtered groundwater drawn from a well approximately 170 meters deep. This release contains 16% alcohol and has a nihonshudo (Sake Meter Value) of +5, indicating a tendency toward a dry profile.

To appreciate its aromatic character, it can be served lightly chilled, alongside sushi, sashimi, or delicately prepared white fish.
