Nanbu Bijin Honjōzō is a sake made by Nanbu Bijin in Ninohe, Iwate Prefecture, Japan. It is a distinct label in the brewery’s honjōzō range, which also includes a dry version called Honjōzō Dry.
Its ingredients include Hitomebore rice, polished to 60% of its original size. The sake is fermented at a low temperature using underground water from the Orizumebasenkyo area and yeast strains including M310. It has an alcohol content of 15–16% and a nihonshu-do value of +5.
The brewery highlights its elegant aroma and clean finish as qualities achieved through careful fermentation.
