Caprice is a filled dark chocolate praline made by the Belgian chocolatier Neuhaus.

The praline has a thin, crisp shell of nougatine made with caramelized sugar and hazelnuts. Neuhaus fills the distinctive triangular shell by hand with Madagascar vanilla cream, then coats it in Belgian dark chocolate.

The mellow sweetness of the vanilla cream softens the intensity of the dark chocolate, while the nougatine adds a caramel note and a delicate crunch. Caprice pairs well with an unsweetened espresso or black tea.
