N.I.P Distilling is a craft distillery based in Hong Kong, founded in 2017 with the ambition of creating an authentic gin that reflects the city's identity, culture, and culinary heritage. The brand name stands for "Not Important Persons", representing the founders' belief that determination, passion, and perseverance can lead to extraordinary achievements regardless of one's background or status. Established by Nic Law and Jeremy Leung, the distillery combines traditional gin-making techniques with botanicals inspired by Hong Kong's distinctive flavors and traditions. All spirits are produced in small batches using "April", a custom-built copper pot-column still manufactured in Germany by the renowned still maker Christian Carl. The recipes combine classic botanicals such as juniper and coriander with locally inspired ingredients including Chinese teas, osmanthus, dried mandarin peel, Asian pear, and other regional fruits and botanicals. Each expression is designed to capture a different aspect of Hong Kong through its aroma and flavor profile. In addition to its core range of gins, the portfolio includes limited editions, cask-aged releases, tea gins, and seasonal expressions inspired by local traditions and gastronomy. The distillery also offers guided tours, allowing visitors to explore the production process and discover the stories behind its spirits. Today, N.I.P Distilling distributes its products across Hong Kong, Macau, Singapore, mainland China, and Taiwan, and has established itself as one of Hong Kong's best-known craft gin producers.
