Hanyuan Gong Jiao by Niushipo is dried red Sichuan pepper from Hanyuan County in China’s Sichuan Province.

Hanyuan Sichuan pepper is characterized by its large berries, thick, aromatic husks, and red to reddish-brown color after drying. The husks are rich in essential oils, giving them an intense aroma, while the flavor is distinguished by a strong, lingering tingling and numbing sensation on the tongue, known as má. These characteristics are typical of Hanyuan Sichuan pepper as a regional product.

It is used whole or ground to season dishes, prepare hot pot, and infuse oils. Combined with chili, it contributes to the characteristic Sichuan flavor known as málà.
