Kōzuru Junmai Ginjō is a Japanese sake produced by Noguchi Shuzōten in Fuchū, in western Tokyo. It belongs to the junmai ginjō category and is the flagship product of the Kōzuru brand, whose name connects the former administrative center of Musashi Province with the crane, a symbol of elegance.

It is made from Omachi rice, rice kōji, and water, with no added alcohol. The rice is polished to 55% of its original grain weight, meaning that 45% of the outer layers have been removed. Production uses soft groundwater drawn from a 160-meter-deep well on the brewery’s premises. The sake contains 15% alcohol and is pasteurized using the hiire process.

It is characterized by pronounced, fresh fruit aromas and a juicy, fruity flavor, which the producer likens to freshly picked fruit. It can be served lightly chilled, enjoyed on its own, or paired with delicately prepared fish and seafood.
