Ogawa Suisan

Hamanaka Shiosui Uni

n/a ·

Hamanaka Shiosui Uni is fresh, raw sea urchin from Ogawa Suisan, a Japanese producer based in Hamanaka, eastern Hokkaido. The term shiosui uni refers to sea urchin packed in salt water. This version is made from locally farmed Ezo Bafun Uni and carries the protected Japanese geographical indication Hamanaka Youshoku Uni.

The sea urchins are fed kombu kelp. Once removed from the shell, the edible lobes are packed in a solution with a salinity close to that of seawater.

The deep yellow to orange lobes are delicate and creamy, with rich sweetness, a mild briny aroma, and pronounced umami. Gently drain the lobes before serving them on their own, over rice as uni don, or as a topping for gunkan-maki.
