Omiso is a small artisanal company based in Los Angeles, founded by Ai Fujimoto, a Japanese woman dedicated to reviving traditional miso paste fermentation. Her products are made exclusively from organic ingredients – Japanese koji starter, American organic soybeans, and sea salt – and are fermented by hand, over a period ranging from several months to more than two years.
