Tamari Ủ Từ 5 Năm is a long-fermented soy sauce marketed under the One4One brand. The product originates from Vietnam’s Tây Ninh Province, one of the regions connected to the company’s network of local producers. It is made by hand using a traditional process associated with the Ohsawa macrobiotic method. The primary ingredients are soybeans, water, salt, and a natural fermentation culture. Carefully selected soybeans are prepared and combined with the culture to initiate natural fermentation. The mixture is then left to mature for at least five years without the use of accelerated industrial processes. Extended maturation gradually transforms the soybean components and develops a more complex flavor than that of briefly fermented sauces. The finished product has a very dark brown color and a denser texture than most conventional soy sauces. Its flavor is intensely salty, full-bodied, and rich in umami, with mild fermented and earthy notes. Due to its pronounced character, it is generally used in small quantities. It can be served as a dipping sauce or used to season rice, vegetables, soups, marinades, and cooked dishes.
