Hanzo Junmai Ginjo Shikō Nama Genshu is a sake produced by Ōta Shuzō in Iga City, Mie Prefecture, Japan. It connects two areas within the prefecture: Shima, where the rice is grown, and Iga, where the sake is brewed. The name Shikō conveys the ideas of “shining ambition” and “the light of Shima” and the release was produced in a limited batch of 1,500 bottles.

It is made exclusively from Kami no Ho rice grown in Shima, cultivated with reduced pesticide use on farmland leased to prevent agricultural abandonment. The rice is polished to 60% of its original grain weight, and the ingredients are rice, rice kōji, and water, with no added distilled alcohol. The designation nama genshu means the sake is unpasteurized and undiluted after brewing. It contains 17% alcohol by volume and has a sake meter value (nihonshu-do) of +4.

It features balanced acidity, gentle natural rice sweetness, and a clean, crisp finish. This profile pairs well with sashimi, as well as fish and seafood sautéed in butter. As an unpasteurized sake, it requires refrigeration and is best served chilled to preserve its fresh character.
