Oude Geuze Oud Beersel is a traditional Belgian gueuze produced by Oud Beersel in the town of Beersel. It is created by blending spontaneously fermented lambics from different years that have matured in wooden barrels and large foeders. Individual lambics may mature for up to three years before being selected for the final blend. Younger lambic provides the residual fermentable sugars, while older lambics contribute greater acidity, dryness, and more complex aromas. Natural secondary fermentation takes place after bottling, producing carbonation and further developing the beer’s character. Its ingredients are water, barley malt, wheat, and hops. The beer contains 6.5 percent alcohol and has a golden-amber color. Its aroma combines fruity and hoppy notes with the characteristic qualities of the wild microorganisms responsible for spontaneous fermentation. The flavor balances a tart yet smooth character with moderate hop bitterness. Maturation in wood contributes additional earthy, vinous, and subtly woody nuances that can vary between vintages and blends.
