Paolo Petrilli Pomodori Passati is an organic Italian tomato passata made from two indigenous tomato varieties grown on the company's family farm in Apulia: approximately two-thirds Torremaggiorese round tomatoes and one-third Prunilli tomatoes. After being harvested by hand at peak ripeness, the tomatoes are briefly blanched together, drained in stainless steel baskets to remove excess liquid, then sieved and packed in glass jars with a single fresh basil leaf. The passata contains no artificial colours or preservatives, allowing the natural flavour and aroma of the tomatoes to stand out. The combination of the two tomato varieties creates a balanced profile with natural sweetness, mild acidity, and a rich, full-bodied texture, while the traditional artisanal production process helps preserve their distinctive sensory characteristics. Its dense consistency and concentrated tomato flavour make it particularly well suited for preparing meat ragù and other recipes that require long, slow cooking.
