Omphacium Olympia Variety Organic is an organic extra virgin olive oil produced by Papadopoulos Olive Oil in the region of Ancient Olympia, in the Peloponnese. It is made from the indigenous Olympia olive variety, also known as Nemoutiana, an ancient local cultivar that was once at risk of disappearing. The name Omphacium derives from the ancient Greek term for oil made from unripe green olives.

The oil is produced exclusively from certified organically grown olives, harvested manually and mechanically between October 10 and 15. Extraction is carried out at 23°C using a two-phase Alfa Laval centrifugal system, while the finished oil is stored in stainless-steel tanks under a nitrogen atmosphere. It has a remarkably low acidity of 0.12% and a high concentration of phenolic compounds, including oleocanthal.

Omphacium Olympia Variety Organic has an intensely fruity, bitter, and pungent profile, with organoleptic scores of 5.5 for fruitiness, 4.3 for bitterness, and 4.5 for pungency. Its aromatic profile features notes of bitter radicchio, ripe tomato, freshly cut grass, fresh apple, artichoke, and herbs, followed by an intense peppery finish.
