Paccheri is a dried pasta from Pasta Tirrena, a brand owned by Tuscany’s Frescobaldi family. Shaped into short, wide tubes, this Tuscan interpretation is made with wheat grown on the Frescobaldi estates.
It is made from semi-whole durum wheat semolina from the Senatore Cappelli, Khorasan, and Evoldur varieties, with the addition of water. The wheat is milled at Molino Borgioli in Calenzano, while pasta production is entrusted to Pastificio Artigiano Fabbri in Strada in Chianti. During milling, the outer bran layer is removed, while the germ and some of the grain’s inner layers are retained. The pasta is extruded through bronze dies and dried for 96 hours at temperatures no higher than 38°C.
This process gives it a natural hazelnut color, a pronounced wheat aroma, and a porous surface that holds sauces well. The wide tubes are well suited to rich ragùs, vegetable sauces, or stuffing with ricotta before baking.
