Busiate Trapanesi from Pastificio Artigianale Campo are a true gem of Sicilian culinary tradition, deeply rooted in the Trapani area and especially in the town of Erice, where this family-run pasta workshop is located. This distinctive spiral-shaped pasta is made from 100% Sicilian durum wheat semolina and pure water, with no added ingredients, following strict artisanal standards.
The dough is extruded through bronze dies, giving the pasta its characteristic rough and porous texture, ideal for absorbing sauces and enhancing overall flavor. Once shaped, the pasta is slowly dried at low temperatures to preserve its nutritional value, aroma, and natural golden color. Busiate Trapanesi are traditionally shaped to resemble twisted ribbons, originally made by hand-wrapping the dough around a thin rod called a buso - a method that dates back to a time when all pasta was handcrafted.
This unique structure gives them an excellent ability to hold rich, flavorful sauces. They are especially renowned when paired with pesto alla Trapanese, a traditional sauce made with tomatoes, almonds, garlic, and basil.
Thanks to their rustic character, Campo’s Busiate are perfect for both everyday meals and special occasions, bringing the authentic spirit of Sicily to every plate.
