Castañas en Almíbar are chestnuts in syrup made by Prada a Tope in El Bierzo, in Spain’s León province. They are made from local Pared chestnuts sourced from growers in the area.
The selected chestnuts are soaked, peeled by hand and individually wrapped in gauze to help them keep their shape during cooking. They are cooked with sugar three times, for a total of about five hours, with cooling periods between each stage. The chestnuts are then carefully placed in glass jars, covered with the syrup formed during cooking and processed in a water bath.
The finished chestnuts have a delicate texture and a sweet flavour infused with syrup. They can be served on their own, added to desserts or used as a sweet accompaniment to savoury dishes.
