First introduced in 1932 to mark the opening of Prunier’s London restaurant on St James Street, this caviar carries a direct connection to the brand’s international heritage and longstanding luxury positioning.

Made from Acipenser baerii sturgeon raised in Prunier’s aquaculture operations in Aquitaine, France, it reflects the house’s expertise in controlled French caviar production. Saint-James is distinguished by its more assertive and characterful profile compared with lighter caviar styles, offering a pronounced briny intensity, generous opening on the palate, and an exceptionally long finish.

The pearls are medium-sized, naturally dark and silky, with a smooth melting texture that balances salinity with subtle nutty depth. Prunier emphasizes that this preparation remains rooted in its original artisanal approach, inspired by historic Iranian caviar preparation methods.

Historically, the product gained prestige when it was served at the coronation of King George VI in 1937, reinforcing its association with elite gastronomy.
